Have a picnic on the tables facing the castle while waiting for an excellent guide tour to learn about the traditional castle building methods. Then go back a few times over the next two decades :)
The main part of town -- pedestrian area, cathedral, etc -- is gorgeous, but don't forget to descend down one of the stair "streets" and take a walk along the picturesque Armançon river.
